AGE:
Can be drunk now, decanted or preferably laid down for 1 year - will age nicely for 1-5 years.

COLOR:
Dark Ruby

NOSE:
Starts off with a rhone style mineral bouquet and carefully opens to a nose of ripe cherry and cassis. It finally ends on notes of anise, sage & parsley lingering in the nostrils.

PALATE:
This mid-bodied wine has a burst of fresh cherry on the front of the mouth and mingles with hints of sage on the mid palate before finishing with notes cassis on the end.

PAIRINGS:
Dried sharp cheeses i.e. parmesan style cheeses, dried jack, dried gouda; strong meats i.e. venison, lamb, sausage with cream based sauces.
